From the kitchen of Piper Treuting

 

Spinach Madeline

A Treuting family food protocol

 

Warning: This dish is HOT (sort of, by Pacific NW standard palettes). You may want to decrease the amount of pepper additions accordingly.

 

               2 pkg. frozen cut leaf spinach

               4 tbs. butter

               2 tbs. flour

               2 tbs. chopped onions

               ½ c. evaporated milk

               ½ c. spinach liquor (from drained, thawed spinach)

               ¾ tsp. celery salt

               ¾ tsp. garlic powder

               ½ tsp. black pepper

               6 oz. Pepper-Jack cheese, shredded

               1 tsp. Worcestershire sauce

               2 drops Tabasco sauce

               Bread crumbs

 

 

·       Cook spinach for approximately 15 minutes in microwave. Drain and save liquor.

·       Melt butter in large saucepan, add onions and cook until soft but not browned.

·       Add flour and mix thoroughly

·       Add milk, spinach liquor, spices. Stir until smooth.

·       Add cheese, and stir until melted.

·       Add spinach, and mix together well.

·       Top with bread crumbs and put in oven to slightly brown the crumbs (optional).
